Creamy, sweet and light, this soup is so delightful it has become a regular in our weekly menus. The kids love it too so that’s always a bonus!

Celeriac and Apple Soup

1 tablespoon olive oil

1 onion, diced

1 stick celery (optional)

2 small celeriacs (or one large), skin cut off and roughly diced

1 medium green apple, roughly chopped (skin on)

1 litre vegetable boullion or equivalent stock?

1 tablespoon plain yoghurt, plus some to serve

Salt to taste

In a deep pot, sauté onion on medium heat, stirring regularly for about 5 minutes. Add celery, celeriac, apple and continue stirring for a few minutes until all ingredients are covered in the oil. Add stock and bring to the boil, reduce to a gentle rolling simmer for about 25 minutes or until all indredients are soft. Blend (with a stick blender or in a blender) until smooth and creamy. Add yoghurt and blend again. Salt to taste.

Serve with yoghurt.
